Go bananas for breakfast with these super hearty waffles! the recipe is gluten free and vegan, but there's no compromise in deliciousness - these are the crispy, fluffy, tender waffles of your dreams! Get the kids mashing bananas and measuring ingredients then sit down together for a breakfast that will fuel the even the busiest weekend!

Peanut Butter Banana Waffles

Ingredients:

  • 1 2/3 cups buckwheat flour
  • 2 ripe bananas, mashed well
  • 1 1/4 cups almond milk
  • 2 Tbsp peanut butter
  • 1 tsp baking powder
  • 1 Tbsp coconut oil
  • 1 Tbsp honey

Instructions:

Combine all ingredients in a food processor and blitz until smooth. If it's very thick add a bit more almond milk a tsp at a time until you reach the consistency you want.
Brush your waffle iron lightly with oil, then pour 1/4 cup of batter in each side.
We let ours cook for 2 minutes, but each iron will be a bit different!
Pile on your favorite toppings or try our Vegan Chocolate Sauce!
  • 1/2 cup vegan chocolate chips
  • 1/4 cup coconut milk
  • Whisk together in a small saucepan over low heat until smooth.
