This is the breakfast (or after school snack) of superheroes! Crunchy, sweet and slightly salty homemade granola! Top some yogurt, or pour over your favorite milk for a super energy boost. This version is nut free but go ahead and add up to 1/2 cup of any chopped nuts if that's your thing. Power up!
Super Granola
Ingredients:
Oat Mixture:
3 cups old fashioned oats
1 cup raisins
1 cup pepitas
1 Tbsp flax seeds
2 tsp vanilla
1/2 tsp salt
Toss well in a large mixing bowl.
Sugar Mixture:
1/3 cup brown sugar
2 Tbsp maple syrup
2 Tbsp coconut oil
Whisk well in a small bowl until smooth and blended.
Pour sugar mixture over the oat mixture in the large bowl and toss well to combine.
Spread mixture on a parchment lined baking sheet. Make sure it's a thin layer!
Bake at 325 for 20 minutes or until you get the level of toastiness you're looking for. Sprinkle away!
